The process of its production substantially is constituted by the following three stages:


  1. The press of olive-crops
  2. The compaction of olive-crops and
  3. The segregation of oil from water and the other impurities

With the passage of centuries the need for the export of big quantities of olive oil led to the discovery of its new means of production, which was characterized from:

  • The production without press means- primitive production
  • The production with rotating mill
  • The appearance and distribution of oil press.
  • Later changes of 19th century
